Sweet Potato Nachos (Impression)

Thin sweet potato slices baked to perfection, layered with beans, cheese, and fresh toppings, bringing a healthier twist to nachos.

01 - 2 sweet potatoes, medium-sized (weighing about 900g together)
02 - 1 tablespoon grapeseed or avocado oil, great for high heat
03 - 1 teaspoon garlic powder
04 - 1 teaspoon salt
05 - 1 teaspoon chili powder (or use half the amount of black pepper if you prefer milder flavors)

06 - 3/4 cup rinsed and drained black beans
07 - 3/4 cup shredded cheese—cheddar or a Mexican blend works nicely
08 - 1/2 cup chunky salsa
09 - Half an avocado, diced into chunks
10 - 1/4 cup plain Greek yogurt or sour cream
11 - Optional: green onions sliced thin, fresh cilantro chopped finely, corn kernels, or jalapeño slices

# Étapes de préparation:

01 - Set your oven to 425°F (220°C) and let it heat up. Rinse and dry the sweet potatoes, then peel roughly so some skin stays on. Slice into rounds about 1/8 inch (3mm) thick.
02 - Lay out some parchment paper on a baking tray. Spread the potato slices in a single layer. Drizzle with oil and then sprinkle on the garlic powder, salt, and chili powder. Mix it all up so it’s evenly coated.
03 - Pop the tray into your preheated oven. Roast for around 20 minutes, flipping them over halfway. For a crispy finish, broil them for a minute or two at the end. Pull them out when they’re soft and crisped up.
04 - While the sweet potatoes are still warm, sprinkle them with the black beans and cheese. Place back in the oven briefly to let the cheese get nice and melty.
05 - Take the tray out and finish things off by spooning on some salsa, yogurt or sour cream, avocado, and any extras you like (jalapenos, corn, cilantro, or green onions). Serve right away while it’s warm and gooey.
