Green Chile Chicken Burritos (Impression)

Cheesy chicken burritos drizzled with creamy green chile sauce and baked till gooey for a delightful dinner.

→ Chicken Stuffing

01 - 6 large tortillas made with flour
02 - 3 cups of pre-cooked chicken, either shredded or chopped up
03 - 1 1/4 cups of grated cheddar cheese
04 - 1 1/2 teaspoons of ground cumin spice
05 - A pinch of crushed dried oregano
06 - An extra touch of olive oil for brushing the burritos
07 - 1 1/2 cups of your favorite type of salsa for flavoring
08 - Two green onions, finely sliced

→ Mild Chili Sauce

09 - 3 tablespoons of plain butter
10 - 3 tablespoons of regular all-purpose flour
11 - One garlic clove, finely minced
12 - 2 cups of low-salt chicken stock
13 - 1/2 teaspoon of ground cumin
14 - 1/2 teaspoon of dry oregano, crumbled
15 - A little salt and cracked black pepper, adjust to your taste
16 - 4 ounces of diced mild green chili peppers
17 - 1/3 cup of cheddar cheese, shredded
18 - 1/2 cup of sour cream

# Étapes de préparation:

01 - Turn your oven to 400°F to preheat. Line a baking tray with foil or parchment.
02 - Stir together the chicken, salsa, cumin, oregano, cheddar, and green onions in a bowl.
03 - Scoop around 1/2 cup of the filling onto each tortilla. Wrap tightly by folding the ends in and rolling up. Put them seam-side down on the tray and brush a little oil on top.
04 - Pop them into the oven and bake for 20-25 minutes until they turn crispy and golden.
05 - As the burritos cook, warm butter in a medium pot on medium heat. Stir in flour when it bubbles and cook while stirring the whole time, for about 3 minutes. Add garlic and cook for half a minute, stirring.
06 - Whisk chicken broth into the butter/flour mix bit by bit, and toss in the cumin, oregano, salt, and pepper. Stir constantly until it thickens up, about 2-3 minutes. Take it off the stove and add green chilies, shredded cheese, and sour cream. Taste and tweak the seasonings.
07 - Take the burritos out when done and change your oven to broil on HIGH. Spoon sauce over each one and sprinkle with some extra cheddar. Broil for a few minutes until the cheese melts and bubbles.
08 - Dish them up while hot. Pair them with some Mexican-style rice on the side.
