Chocolate Truffle Bites (Print Version)

# Ingredients:

01 - 1 soft banana
02 - 80 ml (⅓ cup) of nut butter (like almond or peanut)
03 - 70 g melted dark chocolate (use dairy-free if preferred)
04 - 5 large Medjool dates with pits removed
05 - 12 crunchy rice cakes

# Instructions:

01 - Blend the rice cakes, nut butter, banana, and dates in a food processor. Keep mixing until it turns crumbly and sticks when pressed.
02 - Scoop out portions of the mixture and roll them into small, round balls with your hands.
03 - Pop the balls into the freezer for about 15 minutes so the chocolate will harden quicker.
04 - Take the balls out of the freezer and dip them one by one into the warm, melted chocolate. Decorate however you like.
05 - Let the chocolate firm up completely. You can enjoy them right away or keep them in the fridge for up to a week.
