Combine chickpea flour, olive oil, water, salt, and sugar (if you're including it) in a big bowl. Stir well with a whisk until the mixture is smooth and runny.

Cover the bowl and allow the batter to rest at room temperature for anywhere between 1 to 9 hours. This helps it thicken slightly and boosts its flavor.

Heat your waffle iron on a medium-high setting until it's good and hot.

Lightly coat your waffle iron with oil or a spray. Pour in some batter, lower the lid, and cook until the waffles turn crispy and golden. Repeat with the leftover batter.

Eat immediately for the best crunch. To keep them warm, place in a 93°C oven for up to 15 minutes. For storing, let waffles cool, stack them with parchment in between, and freeze for up to 2 months. To crisp them back up, pop them in a toaster oven.
