01 - Combine chickpea flour, olive oil, water, salt, and sugar (if you're including it) in a big bowl. Stir well with a whisk until the mixture is smooth and runny.
02 - Cover the bowl and allow the batter to rest at room temperature for anywhere between 1 to 9 hours. This helps it thicken slightly and boosts its flavor.
03 - Heat your waffle iron on a medium-high setting until it's good and hot.
04 - Lightly coat your waffle iron with oil or a spray. Pour in some batter, lower the lid, and cook until the waffles turn crispy and golden. Repeat with the leftover batter.
