Zucchini Goat Cheese Bake (Print Version)

# Ingredients:

01 - 8 small fresh zucchini (about 450g total)
02 - 115g creamy goat cheese (like Montchevre), sliced into thin pieces
03 - 60ml chopped fresh mint leaves
04 - Sea salt and ground black pepper, to your liking
05 - 30ml high-quality olive oil

# Instructions:

01 - Set your oven to 200°C and get a baking tray ready with parchment paper on top.
02 - Cut off both ends of each zucchini. Make a shallow cut lengthwise on each one. Sprinkle lightly with salt and pepper.
03 - Toss some mint into each zucchini slit. Slide in strips of goat cheese, top with more mint, and drizzle olive oil over them.
04 - Lay the zucchini on the baking tray and loosely cover with foil. Cook for 10 minutes. Then, take the foil off and bake for another 20 minutes. Serve when hot.

# Notes:

01 - Soft and small zucchini give the best results. Make sure they're firm and tender.
02 - Pick a goat cheese that’s soft and melts easily when heated.
