Tuna Bean Toasts (Print Version)

# Ingredients:

→ Protein

01 - 1 can (5-ounce) drained albacore tuna, packed in water or oil
02 - 1 cup white beans, thoroughly drained and rinsed if from a can

→ Aromatics

03 - 1 clove garlic, finely chopped
04 - 2 tablespoons red onion, cut into thin slices
05 - 2 tablespoons fresh rosemary, finely chopped

→ Citrus

06 - Lemon zest from 1 whole fruit
07 - 2 tablespoons juice squeezed from fresh lemon

→ Oils & Seasonings

08 - ½ cup olive oil, extra virgin
09 - ½ teaspoon salt (kosher preferred)
10 - ½ teaspoon black pepper, freshly ground

→ Base

11 - 4 pieces of sourdough bread

# Instructions:

01 - Grab a medium bowl and mix your drained tuna with the beans, olive oil, chopped garlic, lemon zest and juice, red onion slices, chopped rosemary, salt, and pepper. Stir everything well and let it sit for at least 10 minutes so the flavors can blend nicely. You can also make this ahead and keep it in the fridge overnight.
02 - Pop your sourdough slices in the toaster until they turn nice and golden.
03 - Spread your tuna mix evenly on each piece of toast. Taste it first - you might want to add a bit more salt or pepper.

# Notes:

01 - The flavor gets way better if you make the tuna mix ahead and chill it
02 - Try using cannellini or navy beans - they're perfect for this Mediterranean dish
