Slice tomatoes into thick rounds, about ½ inch wide. Lay them out in a single layer on a wide, shallow dish.

Take a jar with a good lid and add vinegar, oil, onion, garlic, parsley, basil, salt, and pepper. Close the jar tightly and give it a strong shake to blend everything together.

Pour the prepared marinade all over the tomato slices, making sure they’re well coated. Cover the dish and let it sit for 2–3 hours at room temperature, or leave it in the fridge for 12–24 hours.

If you kept the dish in the fridge, let it warm up to room temperature before serving. Arrange the slices onto plates, drizzle the marinade liquid over them, and finish with chopped herbs on top if you'd like.
