Marinated Tomatoes (Print Version)

# Ingredients:

01 - 3 large tomatoes weighing roughly 2 pounds

→ Marinade

02 - ¼ cup red wine vinegar
03 - ⅓ cup high-quality olive oil
04 - 1 teaspoon salt
05 - Freshly cracked black pepper, adjust to taste
06 - 2 small or 1 large garlic clove, crushed or finely diced
07 - 1 tablespoon freshly minced parsley, plus extra for sprinkling on top
08 - 1 tablespoon finely chopped basil, with some left for garnish
09 - 2 tablespoons finely diced red onion

# Instructions:

01 - Slice tomatoes into thick rounds, about ½ inch wide. Lay them out in a single layer on a wide, shallow dish.
02 - Take a jar with a good lid and add vinegar, oil, onion, garlic, parsley, basil, salt, and pepper. Close the jar tightly and give it a strong shake to blend everything together.
03 - Pour the prepared marinade all over the tomato slices, making sure they’re well coated. Cover the dish and let it sit for 2–3 hours at room temperature, or leave it in the fridge for 12–24 hours.
04 - If you kept the dish in the fridge, let it warm up to room temperature before serving. Arrange the slices onto plates, drizzle the marinade liquid over them, and finish with chopped herbs on top if you'd like.

01 - To bring out the best flavor, let the tomatoes soak in the marinade for the full amount of time suggested.
