Chop or blend the pears into tiny pieces. In a small pot, combine pears, water, sugar, and vanilla syrup. Set over medium heat.

Heat the mix until it boils, then lower to a simmer. Stir it constantly for 5-8 minutes until the pears soften and the liquid darkens to gold.

Turn off the heat and pour the hot liquid through a strainer into a container. Use a spoon to extract all juices from the fruit pieces.

Toss out the leftover pear pieces, or blend them for a stronger taste. Let the syrup completely cool before using it.

Mix 45ml gin with 2 tbsp pear syrup in an 8 oz glass. Stir it up, then pour in 3/4 cup sparkling water. Pile on crushed ice and give it a gentle stir.
