Set oven temperature to 350°F (175°C) and allow to fully preheat.

In a medium skillet over medium heat, cook ground beef until thoroughly browned and no pink remains. Drain off excess fat.

Incorporate taco seasoning and undrained diced tomatoes with green chiles into the cooked beef. Stir well and simmer for 5 minutes, then remove pan from heat.

Transfer the beef mixture to a mixing bowl. Add shredded cheddar cheese and ranch dressing, stirring until the filling is evenly combined.

Arrange frozen phyllo tart shells evenly on a baking sheet. Spoon beef mixture into each shell, filling just to the rim.

Place baking sheet in the oven and bake for 8 to 10 minutes, or until cheese is melted and filling is bubbling. If baking tart shells from frozen after filling, extend baking time by 2 to 3 minutes.

Remove tart bites from oven and let cool slightly. Serve warm. Garnish with sliced green onions, chopped cilantro, or a dollop of sour cream if desired.
