Toss the sugar and apricots into a pot.

Warm it over medium heat until it hits 220°F or thickens like jam.

Put in the jalapeño and vinegar, then stir it constantly for another 5 minutes.

Take it off the stove and pour into a safe container. Pop it in the fridge or use it right away.
