Chai Spice Stuffed Dates (Print Version)

# Ingredients:

→ Base

01 - 120g plain almond butter (without added oil or salt)
02 - 15 soft medjool dates, pits removed

→ Spices

03 - 1 tsp ground cinnamon
04 - 1 tsp chai spice mix

→ Coating

05 - 1-2 tbsp melted coconut oil
06 - 250g chocolate chips sweetened with stevia

# Instructions:

01 - Mix the almond butter thoroughly with the cinnamon and chai spice mix in a small bowl. Make sure it's smooth.
02 - Carefully cut a slit along the top of each date, opening it just enough to make a pocket. Take out the pits if there are any.
03 - Put about 1-2 teaspoons of the spiced almond butter mixture into the opening of each date. Gently press it closed.
04 - Lay the stuffed dates flat on a baking tray lined with parchment paper. Pop them in the freezer for 2-3 hours so they harden up.
05 - Heat the chocolate chips and coconut oil gently in a small pan on low. Keep stirring until it's completely melted and smooth.
06 - Take the chilled dates and dunk them into the melted chocolate, covering them entirely. Place back on the parchment-lined tray.
07 - Let the chocolate harden before serving. Store the finished dates in the fridge for a week at most.

# Notes:

01 - For smoother prep, slice the dates at room temp, then chill them well before dipping into chocolate.
02 - No chai spice? Mix equal parts cinnamon, cardamom, ginger, cloves, plus a dash of black pepper as a substitute.
