Sicilian Cauliflower Salad (Impression)

Cauliflower florets, olives, and herbs tossed with a zesty dressing for fresh Mediterranean flavor.

01 - 1 medium head cauliflower, cut into florets
02 - 1 small red onion, thinly sliced
03 - 1 cup cherry tomatoes, halved

06 - 2 tablespoons capers, drained
07 - 1/4 cup fresh parsley, chopped

09 - 1/4 cup extra virgin olive oil
10 - 3 tablespoons red wine vinegar
11 - 1 tablespoon lemon juice
12 - 1 teaspoon Dijon mustard
13 - 1/2 teaspoon dried oregano
14 - Salt, to taste
15 - Black pepper, to taste

# Étapes de préparation:

01 - Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 2–3 minutes until slightly tender yet crisp. Drain immediately and rinse under cold water to halt the cooking process. Pat dry thoroughly using a clean kitchen cloth or paper towel.
02 - In a small bowl or jar, vigorously whisk together extra virgin olive oil, red wine vinegar, lemon juice, Dijon mustard, dried oregano, salt, and black pepper until emulsified. Adjust seasoning to taste.
03 - In a spacious mixing bowl, combine the blanched cauliflower, Kalamata olives, green olives, capers, sliced red onion, cherry tomatoes, parsley, and basil if desired.
04 - Pour the prepared dressing over the salad mixture. Toss gently to ensure even coating. Allow the salad to stand for 10–15 minutes, permitting flavors to meld.
05 - Present chilled or at room temperature. Best enjoyed after resting, and can be made several hours ahead to intensify flavor.
