Juicy shrimp and Spanish chorizo combine with garlic, sherry, and herbs for bold, savory bites.

# Ingredient List:

→ Seafood

01 - 1/2 pound medium shrimp, about 30 pieces, peeled and deveined

→ Charcuterie

02 - 1 package (7.9 ounces) Spanish chorizo, sliced into 1/4-inch rounds

→ Produce

03 - 1 clove garlic, finely minced
04 - 2 tablespoons fresh flat-leaf parsley, chopped

→ Herbs and Spices

05 - 1/2 teaspoon dried oregano

→ Vinegars and Wines

06 - 1 tablespoon red wine vinegar
07 - 1 tablespoon dry Sherry

→ Oils

08 - 1/4 cup extra-virgin olive oil, plus more for sautéing

# Preparation Steps:

01 - In a medium bowl, combine shrimp, minced garlic, dried oregano, red wine vinegar, dry Sherry, and 1/4 cup extra-virgin olive oil. Toss thoroughly to coat the shrimp. Cover and refrigerate for 30 minutes to marinate.
02 - Thread one shrimp and one chorizo round onto each wooden toothpick or skewer. Continue until all shrimp and chorizo are assembled.
03 - Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Working in batches, sear several skewers at a time, turning to cook each side for 3 to 4 minutes, until shrimp is opaque and chorizo is lightly browned.
04 - Remove seared skewers from the skillet and transfer to a serving platter. Sprinkle chopped parsley over the bites and serve immediately.

# Supplementary Details:

01 - To prevent wooden skewers from burning, soak them in water for 20 minutes prior to use.
