Set your oven to 400°F (200°C) and let it warm up.

Stir the Dijon mustard, whole-grain mustard, olive oil, garlic, thyme, salt, and pepper together in a small bowl until it's all blended.

Smear the mustard mix all over the chicken thighs, making sure every spot is coated.

Lay a piece of parchment on a baking tray and set the seasoned chicken thighs on top.

Bake the chicken in the warmed oven for 35-40 minutes, until it's cooked through and hits 165°F (74°C) inside.
