04 - 4 chicken thighs with skin and bones
05 - 3 tablespoons Dijon mustard
06 - 1 teaspoon fresh thyme
07 - Pinch of salt and pepper

# Instructions:

01 - Set your oven to 400°F (200°C) and let it warm up.
02 - Stir the Dijon mustard, whole-grain mustard, olive oil, garlic, thyme, salt, and pepper together in a small bowl until it's all blended.
03 - Smear the mustard mix all over the chicken thighs, making sure every spot is coated.
04 - Lay a piece of parchment on a baking tray and set the seasoned chicken thighs on top.
05 - Bake the chicken in the warmed oven for 35-40 minutes, until it's cooked through and hits 165°F (74°C) inside.
06 - Take the chicken out and let it rest for a few minutes so it stays juicy when you serve it.
