Lightly season chicken breasts on both sides with salt and pepper.

Arrange flour, beaten eggs, and pretzel crumbs each in separate shallow dishes.

Coat each chicken breast in flour, dip in egg, then press into pretzel crumbs to evenly coat.

Arrange breaded chicken on prepared baking sheet. Bake for 25 to 30 minutes, or until cooked through and golden-brown.

Melt butter in a saucepan over medium heat. Whisk in Dijon mustard and milk, cooking until slightly thickened, about 5 minutes.

Remove saucepan from heat. Stir in shredded cheddar cheese until fully melted and sauce is smooth.

Plate baked chicken breasts. Spoon mustard-cheddar sauce over each and garnish with chopped parsley.
