Pink Strawberry Bites (Print Version)

# Ingredients:

→ Base Layer

01 - 1 package of strawberry cake mix (try Pillsbury)
02 - 2 eggs, large
03 - 80 ml (⅓ cup) of any neutral oil like canola or vegetable
04 - 5 ml (1 tsp) vanilla essence

→ Strawberry Topping

05 - 90 g (¾ cup) confectioners' sugar
06 - 40 g (2 tbsp) strawberry jam (Bonne Maman works well)
07 - 22 ml (1½ tbsp) milk of choice
08 - 15 g (1 tbsp) optional cream cheese

# Instructions:

01 - Heat your oven to 175°C (350°F). Prep an 8x8 inch (20x20 cm) pan by coating with nonstick spray or lining with parchment paper or foil.
02 - In a big mixing bowl, stir together the strawberry cake mixture, eggs, oil, and vanilla until it's smooth and combined.
03 - Spread the batter evenly into the greased or lined pan. Bake for 18-22 mins. The center should be set but not overly firm. Cool completely before adding the topping.
04 - Mix powdered sugar, strawberry jam, cream cheese (optional), and milk in a smaller bowl. Whisk until silky smooth.
05 - Once the base is completely cool, spread the glaze evenly on top. Let it set before cutting into squares to serve.

# Notes:

01 - Glass pans might take a bit longer to bake compared to metal ones.
02 - To get neat slices, chill in the fridge for 30 minutes after spreading the topping.
