Effortless Hawaiian BBQ Chicken (Print Version)

# Ingredients:

→ Protein

01 - 2 chicken breasts without skin and bones, diced into 1-inch pieces

→ Produce

02 - 1 red onion, chopped into chunks
03 - 1 large green bell pepper, diced
04 - 1 large red bell pepper, diced
05 - 1 ½ cups of freshly chopped pineapple
06 - Optional: freshly sliced green onions or cilantro for a finishing touch

→ Condiments & Oils

07 - A generous ½ cup of barbecue sauce
08 - 1 tablespoon of olive oil
09 - Adjust salt and pepper to taste

→ For Serving

10 - Optional: cooked white or brown rice

# Instructions:

01 - Fire up your oven to 200°C (400°F) or get your grill going on medium-high.
02 - Grab 4 sheets of aluminum foil, big enough to wrap the food. Evenly portion out the chicken, peppers, pineapple, and onions onto each sheet.
03 - Drizzle olive oil on each pile, sprinkle with salt and pepper, and spoon on 2 tablespoons of BBQ sauce. Give everything a toss so it’s coated nicely.
04 - Fold the foil tightly around the ingredients, making sure it’s sealed well to lock in the steam. Place on the grill for 15-18 minutes or bake in the oven for 20-22 minutes, until the chicken reads 75°C (165°F) inside.
05 - Carefully open each packet, watching out for hot steam. Sprinkle with cilantro or green onions if you like and serve right away, maybe over some rice.

# Notes:

01 - Want juicier chicken? Marinate it with a little BBQ sauce for half an hour before putting the packets together.
02 - Assemble the packets 4 hours ahead of time and keep them in the fridge until it’s time to cook.
