In a medium mixing bowl, whisk together flour, baking powder, and kosher salt until thoroughly blended.

Incorporate Greek yogurt into the flour mixture. Mix using a spatula or fork until the dough forms moist crumbles.

Lightly flour a work surface. Transfer dough and knead about 15 times until tacky yet not sticky. Dough should release clean from your hands.

Divide dough evenly into 16 balls, approximately 25 grams each. Press one ball into each muffin cup, allowing dough to extend slightly up the sides.

Bake for 15 minutes. Remove from oven and, using a small spoon, create a well in the center of each dough cup by pressing gently.

Add 2 teaspoons marinara or pizza sauce to the center of each, top with 1 tablespoon mozzarella cheese, and sprinkle with chopped turkey pepperoni.

Return to oven for 3 minutes, or until cheese is fully melted.

Let bites cool in tin for 2 minutes. Release carefully using a paring knife or offset spatula, loosening any cheese stuck to the pan.
