# Preparation Steps:

01 - Slice the mozzarella cheese into large, uniform sticks approximately 3 inches long and 1/2 inch thick.
02 - Arrange three shallow bowls: place flour in the first, whisked eggs in the second, and combine panko breadcrumbs, plain breadcrumbs, cayenne pepper, smoked paprika, garlic powder, onion powder, salt, and pepper in the third.
03 - Dredge each cheese stick in flour, dip into the eggs, and thoroughly coat with the breadcrumb mixture. Repeat the egg and breadcrumb steps for a second coating on each stick. Place finished sticks on a tray.
04 - Transfer the breaded mozzarella sticks to the freezer for 15 to 20 minutes to firm the coating and prevent cheese from leaking during frying.
