McGriddle Copycat Breakfast Sandwich (Print Version)

# Ingredients:

→ Pancake Mix

01 - 1 ½ cups regular flour
02 - 3 ½ teaspoons baking powder
03 - 2 tablespoons granulated sugar
04 - ¼ teaspoon salt
05 - 1 ¼ cups milk
06 - 1 ½ teaspoons vanilla extract
07 - 4 tablespoons butter, melted
08 - 4 tablespoons real maple syrup, divided

→ McGriddle Fillings

09 - 4 large eggs
10 - 4 slices of cheese
11 - 4 cooked bacon slices or sausage patties

# Instructions:

01 - Combine flour, baking powder, sugar, and salt in a big bowl. Pour in milk, vanilla extract, melted butter, and 1 egg. Stir until you get a smooth, thick batter.
02 - Warm up a griddle or pan over medium-low heat and spray it with non-stick spray. Place a metal biscuit cutter in the pan after spraying it too. Scoop batter into the cutter using an ice cream scoop.
03 - Drop about 2 teaspoons of maple syrup right in the middle of each pancake and use a toothpick to gently mix it into the cooking batter.
04 - Wait until you see bubbles and dry edges, about 2 minutes. Take off the biscuit cutter carefully and flip the pancake gently. Cook until the other side turns brown. Do this for all the batter.
05 - As your pancakes cook, fry up bacon slices or sausage patties in another pan.
06 - Put finished pancakes on a plate and cover them with foil to stay warm.
07 - Wipe the biscuit cutter clean and spray it again. Heat a skillet to medium and crack an egg inside the cutter. Add a tiny bit of salt. Let it cook until the sides set, about 2 minutes. Do this for all 4 eggs.
08 - Remove the cutter and flip each egg carefully. Cook until they're done how you like them.
09 - Make your sandwich by putting cheese, cooked egg, and meat on top of one pancake. Cover with another pancake to finish it off.
