Lemon Herb Parmesan Chicken (Print Version)

# Ingredients:

→ Chicken

01 - 2 pounds of chicken breasts (organic if possible)
02 - 1 tsp thyme (dried)
03 - 1 tsp oregano (dried)
04 - 1 tsp smoked paprika
05 - 1 tsp black pepper
06 - 1 tsp sea salt

→ Spices for the Tuscan Blend

07 - 2 tsp parsley (dried)
08 - 1 tsp basil (dried)
09 - 1 tsp garlic powder
10 - 1 tsp oregano (dried)
11 - ½ tsp rosemary (dried)
12 - ½ tsp black pepper
13 - 1 tsp smoked paprika
14 - ½ tsp sea salt
15 - 1 tsp thyme (dried)

→ Creamy Sauce

16 - 1 ½ cups heavy cream (organic recommended)
17 - 1 tbsp olive oil (extra virgin)
18 - ½ lemon, thinly sliced (leave the skin on)
19 - 4 tbsp butter (unsalted)
20 - 3 tbsp white cooking wine
21 - 1 cup chicken stock (organic)
22 - 4 garlic cloves, finely minced
23 - 1 tsp zest from a lemon
24 - 4 tbsp lemon juice (freshly squeezed)
25 - 1 cup parmesan cheese (freshly grated)
26 - 1 cup kale, chopped small

# Instructions:

01 - Mix together thyme, smoked paprika, oregano, black pepper, and sea salt in a bowl. Coat the chicken in the seasoning blend. Let it sit a few minutes to absorb the flavors.
02 - Melt butter in a large pan over medium heat. Toss in minced garlic and cook until softened. Place chicken in the pan, cooking it for about 3-4 minutes on each side until crispy and brown. Take the chicken out and keep it somewhere warm.
03 - Drizzle olive oil into the same pan. Sprinkle in a bit of your Tuscan seasoning mix, stirring as it heats. Lower the flame and add chicken stock, cream, lemon zest, white wine, and freshly squeezed lemon juice. Stir gently and let it simmer for a couple of minutes.
04 - Add grated parmesan into the bubbling sauce. Use a whisk to blend it all together until smooth and creamy. Toss in the lemon slices and chopped kale. Stir everything well.
05 - Move the chicken back into the skillet, making sure the sauce covers it. Let it cook on low heat for 15-20 minutes. Stir now and then, scooping some sauce over the chicken while it simmers.
06 - Grab your favorite side dish—pasta, rice, or veggies—and pour the yummy sauce with chicken over it. Want more flavor? Sprinkle on extra parmesan before serving.

01 - Using freshly grated parmesan instead of pre-packaged options gives a much smoother sauce.
