Stir together the warm water, honey, and yeast in a large jug. Set it aside for about 5 minutes until you see bubbles forming on the surface.

Using a stand mixer with a dough hook or a big bowl, mix the plain flour, oats, and salt.

Add the yeast mixture and olive oil to the dry ingredients. Stir together until the dough is fully mixed and sticks together nicely.

Wrap the bowl with plastic wrap and pop it into the fridge. Let it sit overnight to slowly rise—this way, the flavors get better and prepping gets easier.

Take the dough out of the fridge 60 minutes before baking so it has time to warm up to room temperature.

Turn your oven on to preheat at 180°C (or 350°F).

Put the dough onto a floured surface and shape it into a loaf. Place it in a greased loaf pan (9x5 inches or 23x13 cm).

Sprinkle a bit more of those oats on top if you'd like to make it look fancy.

Bake the loaf for 45 minutes until it’s fluffy, cooked through, and golden brown. If you tap the bottom of the loaf gently, you’ll hear a hollow sound when it’s done.

After taking it out, brush it with melted butter for extra flavor and let the loaf cool down on a wire rack for at least half an hour.
