Curry Ketchup Sauce (Print Version)

# Ingredients:

01 - 2 tablespoons honey or 2 teaspoons sugar
02 - 1 tablespoon vegetable oil
03 - Water added bit by bit for thinning, if needed
04 - 6 tablespoons finely chopped yellow onion
05 - 2 teaspoons balsamic vinegar
06 - 2 tablespoons spicy curry powder, plus extra for sprinkling
07 - 1 cup (236 ml) tomato puree/passata
08 - 1/2 teaspoon salt
09 - 1 teaspoon Worcestershire sauce

# Instructions:

01 - Warm up some vegetable oil in a pan on medium. Toss in the onions and cook until soft, but avoid letting them brown.
02 - Mix in the curry powder and let it cook for about a minute, so the flavor really pops.
03 - Pour in the tomato puree, add the vinegar, honey (or sugar), Worcestershire sauce, and salt. Let it gently start simmering.
04 - Simmer the sauce for 10 minutes. If it starts looking too thick, stir in a splash of water here and there.
05 - Give it a taste and tweak the sweetness or spice to your liking. Too tangy? A pinch of baking soda helps even it out.
06 - Blend it until extra smooth. Pour over sliced German sausages and top with a bit more curry powder for garnish.

# Notes:

01 - This sauce pairs perfectly with Currywurst, a beloved street food in Germany made with pork sausage that's steamed first, then fried.
02 - You’re looking for a silky texture with even hints of sweetness and spice.
