01 - 8 orange bell peppers
02 - 2 tablespoons olive oil
03 - 2 1/4 cups diced yellow onion
04 - 1 pound ground turkey or ground chicken
05 - 1 tablespoon minced garlic
06 - 1 1/2 cups cooked white basmati rice
07 - 1 can (15.5 ounces) black beans, rinsed and drained
08 - 1 can (15 ounces) tomato sauce
09 - 1 teaspoon dried oregano
10 - 1 teaspoon dried basil
11 - 1/2 teaspoon kosher salt
12 - 1/4 teaspoon ground black pepper
13 - 3/4 cup shredded cheddar cheese or colby jack cheese
14 - 1 1/2 cups water

# Preparation Steps:

01 - Preheat oven to 400°F. Cut the tops off the bell peppers. Remove ribs and seeds using a paring knife. Carefully carve jack-o-lantern faces into one side of each pepper. Arrange peppers upright in a 9x13-inch baking dish.
02 - Heat olive oil in a large skillet over medium heat. Add diced onions and cook for 5 minutes, stirring occasionally. Add ground turkey or chicken and minced garlic. Continue to cook for 5 minutes, breaking apart the meat until browned and cooked through.
03 - Stir cooked basmati rice, black beans, tomato sauce, dried oregano, dried basil, kosher salt, and black pepper into the skillet. Cook for 3 to 5 minutes until the rice absorbs some of the sauce and mixture is evenly heated. Remove from heat.
04 - Fill each prepared pepper with the hot filling mixture, gently pressing down to pack. Top each with an even layer of shredded cheddar or colby jack cheese.
05 - Pour 1 1/2 cups water into the base of the baking dish around the peppers. Bake uncovered for 10 minutes, or until the cheese has melted and peppers have started to soften.
