In a large mixing bowl, place ground chicken, breadcrumbs, finely chopped onion, minced garlic, grated carrot, chopped parsley, and the egg. Mix until just combined.

Add salt, black pepper, paprika, and dried oregano to the mixture. Continue mixing to distribute seasonings evenly.

With damp hands, form the mixture into small round patties, each about the size of a golf ball.

Place the rissoles onto the prepared baking sheet. Lightly spray each rissole with olive oil. Bake in the preheated oven for 20 to 25 minutes, until golden brown and cooked through.
