In a large mixing bowl, whisk together granulated sugar, plain Greek yogurt, vegetable oil or applesauce, eggs, and vanilla extract until the mixture is fully smooth.

Add salt, baking powder, and all-purpose flour to the wet mixture. Mix until a uniform batter forms with no dry pockets.

Gently fold 60 g Fruity Pebbles cereal into the batter, being careful not to overmix.

Pour batter evenly into the prepared loaf pan. Sprinkle 30 g Fruity Pebbles cereal across the surface as a topping.

Bake for 45 to 55 minutes, or until a toothpick inserted into the center of the bread emerges clean.
