Melt 2 tablespoons unsalted butter in a large skillet over medium heat. Add the sliced onions and sauté for 10 to 12 minutes, stirring occasionally, until golden brown and deeply caramelized. Season with salt and pepper. Remove onions from skillet and set aside.

Lay out the bread slices. Spread a thin layer of mayonnaise on one side of each slice. Flip the slices over and spread a layer of Dijon mustard on the opposite side.

Divide the shredded Gruyère and Swiss cheeses evenly over the mustard side of two bread slices. Spoon caramelized onions over the cheese, then top with the remaining bread slices, mayonnaise side facing out.

In the same skillet, melt 1 tablespoon unsalted butter over medium heat. Add assembled sandwiches and cook for 4 to 5 minutes per side, pressing gently with a spatula, until bread is golden brown and cheese is melted.

Remove sandwiches from the skillet. Let cool slightly, then slice diagonally and serve hot.
