Fish with Tomatoes Olives (Print Version)

# Ingredients:

→ Fish Flavor Mix

01 - 1 fillet of fish
02 - 1 teaspoon each of Cajun and Italian spices
03 - 1 teaspoon smoked paprika powder
04 - ½ teaspoon chili flakes
05 - 1 teaspoon optional fish spice mix
06 - ½ teaspoon black pepper
07 - ½ teaspoon table salt
08 - 3 tablespoons of oil

→ Tomato and Olive Blend

09 - 2 branches of parsley
10 - A pinch of salt and some pepper
11 - Fresh thyme sprigs (2 pieces)
12 - A quarter cup of olives
13 - Two tablespoons water
14 - 2 cups of tiny cherry tomatoes
15 - Three garlic cloves, finely chopped
16 - 3 tablespoons butter (salted)

# Instructions:

01 - Set your oven to 400°F (200°C) and let it heat up.
02 - In a bowl, blend your paprika, Cajun and Italian seasonings, chili flakes, fish spice, salt, pepper, and oil. Save a teaspoon of this mix for later when cooking the tomatoes.
03 - Make sure both sides of the fillet are completely covered with the spice mixture.
04 - Use a medium heat setting on your pan with a bit of oil. Cook the fish for about a minute on each side, just long enough to get that nice brown color. Set the fillet aside once done.
05 - Still using the same pan, throw in the cherry tomatoes, olives, parsley, thyme, reserved spice blend, minced garlic, water, and a sprinkle of salt and pepper. Stir and cook for a little over 3 minutes.
06 - Place the fish on top of your tomato and olive mixture in the pan. Add butter on top of the fillet. If you're not using an oven-safe pan, move everything to an oven-friendly dish.
07 - Bake in the hot oven for 10 minutes. The fish should be ready once it’s no longer raw inside.
08 - Once out of the oven, serve the dish with whatever side you enjoy most!

# Notes:

01 - Double-check that your pan can handle being in the oven.
02 - When cooked all the way, the fish will come apart easily if you nudge it with a fork.
