Turn your oven on to heat up to 200°C. Rinse off the potatoes, cube them into small pieces, and toss them into a baking dish.

Measure out 1 tablespoon of olive oil and pour it over the potato cubes. Toss in black pepper, salt, thyme, and oregano. Mix well until everything's coated evenly.

Put the feta block in the center of the dish, pressing it gently into the seasonings for added flavor. Pop in the garlic bulb and half the lemon pieces. Pour the rest of the olive oil over all the ingredients.

Bake everything for 45 to 55 minutes, keeping an eye on it. If the garlic turns dark too quickly, pull it out around the 35-minute mark.

When the garlic's cooled a bit, squeeze the soft insides out from the skins. Chop and mash into a rough paste, then mix it into the potatoes along with the juice from the leftover lemon wedges and chopped basil. Stir gently to keep the feta chunky.

Pour honey over the top, then sprinkle more fresh basil for extra color and sweetness. Serve right away while it's still warm.
