Dice the onion and finely chop garlic. Toss them into a pan along with water and spinach, leaving out the tofu for now.

Bring the mix to a boil. Let it simmer until the spinach softens and the onion becomes translucent, around 5 minutes.

Let things cool down slightly, then move everything to a blender. Toss in the tofu, yeast flakes, salt, pepper, and both garlic and onion powders. Pulse until super smooth.

Unroll your puff pastry and spread it into a 25 cm x 35 cm (10" x 14") rectangle.

Take your filling and smear it evenly over the dough, but leave a small border all around. Then tightly roll up the long side into a log.

Slice the log into 12 even rounds using a sharp knife. Put them cut-side up on a baking tray with parchment. Pop into a 200°C oven and bake for 20 minutes until puffed and golden.
