Effortless Vegan Spinach Rolls (Impression)

Crispy pastry stuffed with spinach, tofu, and tasty seasoning. Great for snacks or if you just want something light.

# Liste des ingrédients:

01 - 1 sheet (250 g) of pre-made puff pastry

→ Filling

02 - 4 garlic cloves, finely chopped
03 - 1 medium onion, diced
04 - 100 g firm tofu, crumbled
05 - 15 g of yeast flakes
06 - 100 ml plain water
07 - 1/2 teaspoon of table salt
08 - Freshly cracked black pepper as desired
09 - 200 g fresh spinach leaves
10 - 1 tablespoon of ground onion
11 - 1 tablespoon garlic powder

# Étapes de préparation:

01 - Dice the onion and finely chop garlic. Toss them into a pan along with water and spinach, leaving out the tofu for now.
02 - Bring the mix to a boil. Let it simmer until the spinach softens and the onion becomes translucent, around 5 minutes.
03 - Let things cool down slightly, then move everything to a blender. Toss in the tofu, yeast flakes, salt, pepper, and both garlic and onion powders. Pulse until super smooth.
04 - Unroll your puff pastry and spread it into a 25 cm x 35 cm (10" x 14") rectangle.
05 - Take your filling and smear it evenly over the dough, but leave a small border all around. Then tightly roll up the long side into a log.
06 - Slice the log into 12 even rounds using a sharp knife. Put them cut-side up on a baking tray with parchment. Pop into a 200°C oven and bake for 20 minutes until puffed and golden.

02 - If you've got some left, store them in a tightly sealed container in the fridge for up to 3 days. To perk them up, warm them in a 180°C oven for 5-7 minutes.
