Stir the yeast, sugar, warm milk, and water together in a bowl. Let it sit for 5-10 minutes until it gets bubbly.

In a big bowl, stir salt into the flour. Add in the foamy yeast, egg white, and olive oil, stirring until the dough becomes sticky and wet.

Cover the mixing bowl with a towel and leave it somewhere warm for about 30-40 minutes, so the dough can puff up and double in size.

Dust some flour on a parchment-lined baking tray. Take the dough and gently form it into a round shape on the tray, being careful not to press out too much air.

Place a towel over the dough again and give it another 20 minutes to rise.

Whisk together the leftover egg yolk, yogurt, and 1 tsp of water to make a light egg wash.

Brush the egg wash all over the dough. Press lightly to create a ring about 2.5 cm inward from the edge, then make crisscross lines inside the circle. Top with sesame and nigella seeds.

Bake at 200°C in a preheated oven for around 20 minutes, or until it turns a rich golden brown color.
