# Ingredient List:

→ For the Burger

01 - 450 grams (1 pound) ground beef, 80/20 blend
02 - Kosher salt, to taste
03 - Freshly ground black pepper, to taste
04 - 8 slices American cheese
05 - 4 burger buns, split
06 - 2 tablespoons unsalted butter
07 - 1 small yellow onion, finely diced

→ For the Special New York Sauce

08 - 60 milliliters (1/4 cup) mayonnaise
09 - 30 milliliters (2 tablespoons) ketchup
10 - 15 milliliters (1 tablespoon) yellow mustard
11 - 10 milliliters (2 teaspoons) white vinegar
12 - 6 grams (1 teaspoon) granulated sugar
13 - 30 grams (2 tablespoons) finely chopped dill pickles
14 - 2 grams (1/2 teaspoon) onion powder

# Preparation Steps:

01 - Divide ground beef into 8 equal balls, approximately 56 grams (2 ounces) each. Season each portion on all sides with kosher salt and freshly ground black pepper.
02 - Heat skillet over medium-high heat. Melt butter and add finely diced onion. Sauté until onions are translucent and golden, about 3-4 minutes. Transfer to plate and set aside.
03 - Increase skillet to high heat. Place two beef balls onto the skillet and immediately press down firmly with a spatula to flatten each to approximately 1 centimeter thick. Cook undisturbed for 2-3 minutes until edges are brown and crispy. Flip patties and continue cooking for 1-2 minutes.
04 - Place a slice of American cheese on each patty while still hot. Stack two patties, cheese-side up, for each burger.
05 - Lightly butter the cut sides of burger buns and toast in the skillet until golden brown.
06 - In a small bowl, combine mayonnaise, ketchup, mustard, white vinegar, sugar, chopped pickles, and onion powder. Stir thoroughly until completely incorporated.
07 - Spread a generous spoonful of Special New York Sauce on the bottom half of each bun. Top with a spoonful of sautéed onions, then stack double cheesy patties. Crown with top bun and serve immediately while hot.
