Coconut Lime Bars (Print Version)

# Ingredients:

→ Base

01 - ¼ teaspoon salt
02 - 1¼ cups all-purpose flour
03 - ⅔ cup brown sugar
04 - ½ tablespoon baking powder
05 - ¼ teaspoon coconut extract
06 - 1 egg, at room temp
07 - ½ cup butter, softened
08 - 1 teaspoon vanilla extract
09 - ⅓ cup mini white chocolate chips
10 - ½ cup shredded coconut, unsweetened

→ Lime Frosting

11 - Lime green food dye (as needed)
12 - ½ cup butter, softened
13 - 1 tablespoon milk or heavy cream
14 - 1½ cups powdered sugar
15 - ½ teaspoon lime extract
16 - 2 tablespoons fresh lime juice

→ Garnish

17 - 2 tablespoons shredded coconut
18 - 2 tablespoons melted white chocolate

# Instructions:

01 - Heat oven to 175°C (350°F). Grab a baking dish—20x20cm (8x8-inch)—and line it with parchment paper, leaving a bit sticking out for lifting later.
02 - Beat softened butter with sugar until creamy and fluffy. Stir in egg along with both the vanilla and coconut extracts. Fully combine.
03 - Mix the coconut flakes, flour, salt, and baking powder in carefully until just combined. Toss in chocolate chips lightly.
04 - Pour batter evenly into your lined dish and bake for 15-16 minutes. It's done when the edges are golden and the middle looks firm. Cool completely on a rack while still in the dish.
05 - Whisk butter till creamy, then gradually add powdered sugar. Finally, add lime juice, lime flavor, and milk until smooth. Adjust with lime green dye if desired for brighter color.
06 - Smooth the frosting on the cooled bars. Drizzle the melted white chocolate on top using a spoon or bag, then sprinkle coconut.
07 - Slice into squares. Great served chilled or as-is. They go well with a glass of milk or a coffee.

# Notes:

01 - If lime green dye isn't available, mix a little green and yellow for a similar look.
02 - Seal these in a container and refrigerate—they’ll last up to 5 days.
