Place a bowl or container with a 6-cup capacity into the freezer to chill before use.

Roughly chop circus animal cookies on a cutting board. Reserve approximately 1/2 cup of chopped cookies and a few whole cookies for garnish.

In a large bowl, combine sweetened condensed milk, vanilla extract, and chopped cookies (excluding reserved cookies).

In a separate large bowl, whip the heavy cream until stiff peaks form.

Gently fold approximately 1 cup of whipped cream into the condensed milk mixture. Carefully fold in the rest of the whipped cream until just incorporated.

Divide the mixture in half. Add several drops of pink food coloring to one half, folding gently until a soft pastel pink color is achieved.

Retrieve the chilled container. Add a layer of uncolored base, followed by a sprinkle of nonpareils and optional cookie pieces. Layer the pink base and additional sprinkles. Repeat, alternating colors and adding sprinkles, until all mixture is used. Run a knife through the layers a few times to create a swirl pattern, being careful not to overmix.

Top with reserved chopped and whole cookies and an additional layer of nonpareil sprinkles for decoration. Place the container in the freezer and freeze for 4 to 6 hours, or until completely firm.

Scoop the ice cream into bowls and serve immediately.
