Bring a large pot of salted water to a boil. Add rotini pasta and cook according to package directions until al dente. Drain and set aside.

Heat butter or olive oil in a large skillet over medium-high heat. Add cubed steak, season with Cajun seasoning, salt, and pepper. Sear for 2 to 3 minutes per side until well browned. Remove steak from skillet and set aside.

In the same skillet, add beef broth and stir, scraping up any browned bits from the bottom. Add additional Cajun seasoning and chili powder. Stir in heavy cream and let simmer for 2 to 3 minutes until slightly thickened.

Reduce heat to low. Gradually add shredded cheese to the skillet, stirring continuously until cheese is completely melted and sauce is smooth.

Add cooked pasta to the skillet, tossing to coat evenly in the cheese sauce. Gently fold in reserved steak pieces and allow to heat through for 2 minutes.

Serve hot. Garnish with chopped parsley or additional Cajun seasoning as desired.
