Cook ground beef in a skillet over medium heat until fully browned, then drain off any excess fat.

Add chopped onion, bell pepper, and minced garlic to the skillet. Cook until vegetables are soft and fragrant.

Stir in salt, black pepper, paprika, dried oregano, dried basil, dried thyme, onion powder, and garlic powder until evenly combined.

Remove skillet from heat and allow filling to cool slightly before assembling.

Unroll pie crusts on a flat surface and cut into uniform squares or rectangles.

Place a portion of the beef mixture onto one half of each pastry square. Evenly sprinkle shredded cheddar cheese over the filling.

Fold the remaining pastry over the filling. Press the edges together firmly to seal.

Transfer assembled pockets to the prepared baking sheet and brush tops with beaten egg.

Bake in center of oven for 20 to 25 minutes or until pastry is golden brown and the filling is heated through.
