Preheat oven to 375°F. Grease a 9-inch pie dish or cast-iron skillet.

In a skillet over medium heat, cook chopped bacon until crisp. Remove bacon and set aside, preserving drippings in pan.

Add ground beef and onion to skillet with bacon fat. Cook until beef is browned and onion is tender. Drain excess fat as needed.

Mix in cooked bacon, 3/4 cup cheddar cheese, egg, salt, and black pepper. Stir thoroughly until evenly combined.

Transfer beef mixture to prepared pie dish and press into an even layer.

Sprinkle remaining 1/4 cup cheddar cheese evenly over the top.

Bake for 25 to 30 minutes, or until top is bubbly and golden brown.
