Season steak tips with Cajun seasoning. In a large skillet, heat olive oil and 1 tablespoon butter over medium-high heat. Sear steak pieces until browned on all sides, about 3-4 minutes. Remove from skillet and set aside.

In a large pot, bring salted water to a rolling boil. Add rigatoni and cook until al dente according to package instructions. Reserve 1/2 cup pasta water, then drain pasta.

In the same skillet, melt remaining 1 tablespoon butter over medium heat. Sauté minced garlic until fragrant, about 1 minute. Pour in heavy cream and simmer gently for 2-3 minutes.

Stir in grated Parmesan cheese until fully melted. If desired, add mozzarella or Fontina cheese and stir until smooth. Season sauce with salt, pepper, and additional Cajun seasoning to taste.

Add cooked rigatoni to the cream sauce, tossing to coat. Gradually add reserved pasta water to loosen sauce as needed. Gently fold in seared steak tips until evenly distributed and heated through.
