# Preparation Steps:

01 - Preheat the smoker or oven fitted with a pizza oven insert to 375°F. Line a quarter sheet pan with foil and set a cooling rack on top.
02 - In a small bowl, combine 14 teaspoons brown sugar with smoked paprika. Set the mixture aside.
03 - Place one slice of ham on a plate and sprinkle evenly with 1 1/2 teaspoons of the brown sugar mixture. Position one pineapple spear near the lower third of the ham and carefully roll it up like a burrito.
04 - Starting at one end of the rolled spear, secure one end of a bacon slice with a toothpick, then loosely wrap the bacon around the spear. Overlap a second slice of bacon if necessary, pinning each end with a toothpick. Use a third toothpick to secure the final end. Repeat for all spears and transfer to the prepared rack.
05 - Sprinkle the remaining 2-plus teaspoons of the brown sugar mixture over the top of the wrapped spears. Place the pan in the oven and bake for 25 minutes.
06 - While spears bake, melt butter in a saucepan over medium heat. Add maple syrup, brown sugar, seasoning, and bourbon. Whisk well to combine, reduce heat to low, and simmer for 10 minutes. Remove from heat and set aside.
07 - Using tongs, carefully flip the spears and return to the oven. Bake for an additional 8–10 minutes.
08 - Remove pan, baste spears with maple bourbon butter glaze, and bake for 5 minutes. Carefully flip, baste the other side, and bake another 5–7 minutes until the glaze is caramelized and bacon is fully cooked.
09 - Transfer spears to serving plates. Remove toothpicks before serving.
