Snap off the ends and pull away the strings on both sides with your hands or a peeler. Slice them so they’re short enough to fit in your grill pan. Toss them in a bowl with olive oil and seasoning.

Turn on the heat until the pan’s extremely hot. Work in batches if you need to so you don’t overcrowd it, and gently arrange the beans on the pan.

Flip the beans a few times until you see lovely dark grill marks on all sides.

For the dressing, slice the lemon in two and place it cut side down on the grill. Let it blacken and pick up some smoky color.

Mix tahini, honey, and garlic in a small bowl. Gradually stir in small amounts of water until it becomes smooth. Squeeze in your smoky lemon juice and season to your liking.

Coat the beans thoroughly in the dressing and enjoy immediately. Optional toppings like preserved lemons, raisins, or nuts can add a nice touch.
