Pepperoni Bean Salad (Print Version)

# Ingredients:

→ Salad

01 - 1 cup mozzarella pearls
02 - 1 ¼ cups halved cherry or grape tomatoes
03 - ⅔ cup diced pepperoni
04 - ¼ cup fresh basil, thinly sliced and packed
05 - ⅓ cup minced red onion
06 - 1 green bell pepper, finely diced
07 - 1 jalapeño, minced small
08 - 2 ¼ cups cooked large white beans, rinsed and fully drained

→ Spicy Honey Dressing

09 - 1 teaspoon hot honey (or regular honey with a pinch of chili flakes)
10 - 2 minced garlic cloves
11 - ¼ teaspoon sea salt
12 - 4 tablespoons champagne vinegar
13 - 1 teaspoon dried oregano leaves
14 - 3 tablespoons olive oil
15 - 1 teaspoon Dijon mustard

# Instructions:

01 - Dump everything for the salad into a big mixing bowl.
02 - Blend all dressing ingredients in a small dish or jar using a fork until creamy and fully mixed.
03 - Coat the salad with your dressing by pouring it on and tossing. Serve chilled or at room temp. If you like, top it with a bit of oregano and red pepper flakes.
