Tropical Banana Nut Bread (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 2 cups white sugar
02 - ¾ teaspoon salt
03 - 1 cup chopped walnuts
04 - 1 teaspoon ground cinnamon
05 - 1 teaspoon baking soda
06 - 3 cups all-purpose flour

→ Wet Ingredients

07 - 2 teaspoons vanilla extract
08 - 1 (8 ounce) can crushed pineapple, drained
09 - 1 cup vegetable oil
10 - 3 eggs, beaten
11 - 2 cups mashed overripe bananas

→ Mix-ins

12 - 1 cup flaked coconut
13 - 1 cup diced maraschino cherries

# Instructions:

01 - Set your oven to 175°C (350°F) and let it preheat. Grab two 9x5 inch pans and grease them up.
02 - Toss the flour, sugar, salt, baking soda, and cinnamon into a big bowl. Stir them up well.
03 - Dump the nuts, eggs, mashed bananas, oil, pineapple, vanilla, cherries, and coconut into the dry mixture. Stir gently—don’t overdo it.
04 - Split the batter evenly into the greased pans. Bake for about an hour. It’s ready when a toothpick pushed into the middle comes out clean.
05 - Let the loaves sit in their pans for 10 minutes. Move them to a cooling rack after that to finish cooling before slicing them up.

01 - Keep your loaves fresh by wrapping up cooled ones in plastic wrap and foil. They freeze well!
02 - Toasting the walnuts ahead of time brings out the best flavor.
