Blueberry Banana Bread (Print Version)

# Ingredients:

01 - 1 teaspoon baking soda
02 - ½ teaspoon salt
03 - 2 cups all-purpose flour
04 - ½ cup butter, softened
05 - 1 cup white sugar
06 - 2 large eggs
07 - 2 teaspoons vanilla extract
08 - 2 ripe bananas, mashed
09 - 1 cup fresh blueberries

# Instructions:

01 - Set your oven to 175°C (350°F) and grease three mini loaf pans.
02 - In a medium bowl, stir together the baking soda, salt, and flour.
03 - Using an electric mixer, cream together butter and sugar in a large bowl until it turns fluffy and pale.
04 - Mix in the eggs one by one, beating after each. Add the vanilla and mashed bananas too.
05 - Slowly combine the dry mix with the wet, stirring until smooth. Gently fold in the blueberries until they’re mixed throughout.
06 - Pour the batter into your greased pans, then bake in the oven. After about 30–35 minutes, poke the center with a toothpick. If it comes out clean, they’re done!
07 - Allow the loaves to sit in the pans for 10 minutes. Then, move them to a cooling rack to cool completely before digging in.
