Set oven to 200°C. Prepare a baking sheet with parchment paper or lightly grease to prevent sticking.

Wipe mushrooms gently with a damp paper towel or soft brush to remove dirt. Halve large mushrooms, leave small ones whole.

Whisk together balsamic vinegar, olive oil, minced garlic, thyme, salt, black pepper, and red pepper flakes in a mixing bowl.

Add mushrooms to the marinade and toss thoroughly until evenly coated. Let stand for 5 minutes.

Distribute mushrooms in a single layer on the prepared baking sheet. Avoid crowding for optimal caramelisation.

Roast in the preheated oven for 20–25 minutes, stirring once halfway, until mushrooms are tender and browned.

Remove from oven and sprinkle with chopped fresh parsley. Serve hot as a side, over rice, or added to salads.
