Crack the eggs into a bowl and give them a good whisk until the yolks and whites are blended. Add some salt and a touch of pepper.

In a hot frying pan, cook the bacon until it’s just right for your liking. Take it out of the pan, let it cool for a second, and chop into smaller pieces.

Warm a non-stick pan over a medium-low flame. Toss in some butter, and let it melt. Tilt the pan so the butter coats the surface evenly.

Pour the whisked eggs into your hot pan. Let the edges firm up, then gently loosen them with a rubber spatula as it all cooks. Let it sit until done just the way you like.

Spread the bacon pieces and Brie over one side of the cooked eggs. Fold the other side over, carefully slide it onto a plate, and enjoy while it’s hot!
