Three-Ingredient Coconut Date Rolls (Print Version)

# Ingredients:

01 - 1 cup of medjool dates, pitted
02 - 1/3 cup of plain shredded coconut
03 - About 8 to 10 almonds (if you'd like)

# Instructions:

01 - Toss the dates into your food processor. Let it run until the dates are chopped up and stick together in a clump that's a bit tacky.
02 - Pour the shredded coconut in a small bowl. Shape the date mix into small balls (about an inch each), then roll them in the coconut to cover them fully. For extra flair, gently press an almond onto the top of each ball. Dig in!
